BORDER
TART
Non traditional tart recipe.
PREP: 1 hour 30 mins
COOK: 30 mins
YIELD: 8 Inch Tart
METHOD
01
Mix
Add flour and almonds to a bowl, crumble in the cold butter.

Form
Add sugar, egg and enough cold water to form the pastry.

Rest
Rest pastry in the fridge.
Note: An hour should do it.

Grind Walnuts
Break up walnuts in pestle & mortar or a blender.
Note: Grind is coarse, you should have half chunks, half "dust" to bind

Mix Filling
Mix sultanas, walnuts, icing sugar, egg and room temperature butter. Then add the vinegar to taste.
Note: The vinegar should add balance, depth and a separate fruity note.

Blind Bake
Roll the pastry, line the tart case, blind bake and allow to cool.

Final Bake
Add filling to tart case and bake for around 20 minutes at medium heat.
